July Challenge Week 3

I'm a little late in writing my post for week 3, but I have awesome news to share. For the first time since I got pregnant with my second child, I'm able to fit into a size 10. A little tight in the buttock and tummy area, but hey those pants zipped up and I was able to walk around in them. I have lost a total of 26.5 lbs and I have 17.5 lbs to go. Here a picture of my progress and you can see my tummy and butt have gone down big time.

I'm not a great writer and I'm terrible with grammar, but I do hope the changes I've made in my life will help others as well. Since I found her blog and I follow her on facebook I have made changes and I don't feel deprivation. She has a variety of recipes and also gives health explanations as to why and a little history of health issues. I've become obsessed with her blog and I also purchased two of her books so far.

July Challenge Week 1


I always hear and read that a picture is worth a thousand words. Well, I got pictures to show you. A lot of picture of my success, recipes for the week, and my loves. First and foremost, Woo hoo! I'm 169lbs which is and awesome accomplishment and here are the photos to prove it to you. Even though I don't need to prove it, but it just feels great to share this milestone with my friends.




Crackslaw is a funny name but this is and awesome invention by who knows who, but Thank you whoever you are.
Crackslaw Recipe:
1 pound ground beef
2 cloves garlic, minced
16 ounce bag coleslaw mix
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tsp Hot Sauce
Salt and pepper to taste
2 teaspoons granular Splenda.
In a very large skillet brown the ground beef with the garlic and a little salt and pepper. Add the cabbage and stir-fry until the cabbage is tender. Add the remaining ingredients and heat through. Adjust the seasoning to your taste.
Makes 6 servings

Per Serving: 263 Calories; 16g Fat; 22g Protein; 7.5g Carbohydrate; 3g Dietary Fiber; 4.5g Net Carbs

Low Carb-One Minute Chocolate Mini-Cake for One! This is a great treat to do with your 5 year old. My daughter loves to help me around the kitchen and we always have arguments because I don't want her in there while I'm cooking. She is a strong willed child and there are times that I give in. She helped me whip up these mini cakes then we enjoyed them while watching T.V. Great bonding moment for us both.




Here are a few pictures of my little ones enjoying life. My 11 month old is crawling all over the house, she holds her bottle and is now drinking her juice with a straw. So far so good and her development is right on target.



Here she is with uncle Rudy. She is a happy baby and look at all those teeth.



My poor baby's don't have a pool, but don't worry, my strong willed child will find a way to have fun with water. She grabbed the water hose and started spraying us and herself.



I hope you all enjoyed your 4th of July. My kids went to bed early and didn't watch the firework show. They don't enjoy fireworks at their small ages, so when they are older we'll see.

June Challenge Week 4



The final week of my June Challenge and I can say it was a success. I lost another pound this week.  It doesn't sound like a lot but my overall weight loss is a total of 24lbs since I started on January 1st. Now that is A LOT.
 
There has been challenges and struggles along the way and my journey does not stop here. I still have more pounds to lose and so far my average is 1lb a week. My journey is not about dieting, it's about changing my mind set and making healthier choices in food. That is the key to losing weight and keeping it off for good. I'm doing this for me and for my family. They deserve a happy wife and a happy mommy. The way I feel is reflected in how we live our lives.
 
Here's and overview of my week:
 
I have the occasional Starbucks when needed. I don't deprive myself, but I do make a healthier choice. My order is a Venti Breve Latte with 2 Splendas. This is about 16 carbs.




I've seen recipes on the web and a few blogs that I read so I grabbed a few items I had handy, put them in a bowl, and microwaved for 2 minutes and Wah lah, Enchilada Casserole.

My recipe:
2 cup glass bowl to put ingredients in
2 tbls Las Palma Green Sauce
Shredded Rotisserie Chicken from Von's - Added 2 handfuls
Spinach - spread around
Cheese - sprinkle as much as you desire
Microwave for 2 minutes





I was making pancakes for my family and I whipped up some low carb pancakes for me.
Left over steamed broccoli - 1 cup
4 eggs
Splash of half & half
Salt & pepper
Mix in small blender
Add butter to pan & cook

Here's a simple snack I had during the week. Cucumber with a little salt and Chile.



Another one of my creations were these Cheese Stuffed Marinara Meatballs
1 lb ground turkey
1/4 cup almond flower
1/4 cup Parmesan cheese
1/4 tsp black pepper
1 tsp ground cumin
1 1/2 tsp garlic salt
String cheese mozzarella cut into pieces and place in middle then cover with meat mixture. 
I used a muffin pan with 24 cups 
Bake 350 for 20 min then broil on low for 5 min
Top with marinara sauce of your choice.


 
Another lazy and quick snack for me is an egg salad. I usually do it with ham but I was in the mood for bacon.
3 hard boil eggs
1 tbs of mayo
4 strips of bacon or you can add ham instead.
Salt and pepper
Mix all together
 
It was my moms Birthday on 6/27/2013. We treated her to one of her favorite restaurants, Sizzlers. I was able to stay on my low carb way of eating. I do have to admit, I ate a slice of the cheese bread. Oops. But like I said before, I'm not perfect and it was only one slice. I didn't eat the whole basket full. I ordered the shrimp skewers with the vegetable medley. Here's a picture of my mommy and her baby boy Rudy.
 
 
My husband is an overprotective daddy. The baby turned 11 months and she's crawling all over the house. When she was learning to crawl and sit down she would fall to the side to backward and bump her head. My husband bugged me to get her a baby helmet. The one he suggested was $45 and I said no, she doesn't need it and she's going to learn that way. But he insisted and I found the SoftTop for $21. I don't really like it because my baby sweats a lot and with this small helmet she will be sweating even more. But look how cute she looks. We'll probably need it more when she starts walking. We have tile floor and that is a hard fall for my munchkin.

June Challenge Week 3





This is week 3 and I'm happy to report I have not gained weight. On a sad note, I have not lost any either. I'm stuck at 171 lbs. It's probably because the older I get, the harder it is to lose weight. Thanks Alicia for that wisdom you have bestowed upon me. Or I can blame it on my sweet tooth. The good thing is that I can always blame someone or something for my lack of will power.

Here is the overview for June Challenge Week 3.

I completed the Jillian Michael's 7 day detox tea on Wednesday and to tell you the truth I didn't feel much of a difference. I didn't lose any weight and my energy level was the same. The only difference was going to the bathroom every 5 minutes. Maybe my liver and kidneys got cleaned, but I will never know. 

We visited IHOP to celebrate Fathers Day. My husband is a pancake lover and that was his choice for his day. I ordered an omelet with spinach, mushrooms and bacon, it was delicious. It might have a few carbs, more than what I need because they add a splash of pancake batter to the egg mixture.

And for dessert I made Chocolate Mint Fudge Pops. They came out really good and creamy. I think if I just put it in a containers I can scoop it like ice cream. I'll have to try next time I make them.
Have I ever told you I have an awesome friend, co-worker, partner in crime and we are both on low carb. We swap recipes and we share them at work. This week she made Jalapeno Popper Meatballs and she was so kind to share some with me. They were delicious and I want more (hint hint Alicia). I ate them so fast that I forgot to take a picture for you. But you can visit the link HERE for the recipe on the Jalapeno Popper Meatballs. Alicia has a Weekly Low Carb Wrap Up, and she has a lot of great recipes and ideas. 
 
I always mention my sweet tooth because I still crave sweets. I live in a household with two kids, my husband, and my diabetic mom and they are always eating bread, cake, cookies, chocolate, etc. I can't control them and they eat in front of me. So, I've decided to make "healthified" sweet treats for all of us. Why not. If I'm making healthier food for myself and I let my family keep eating all that junk food, I'm not doing them any good. They need to eat healthy too. I have leaned so much from reading a blog called Maria's Nutritious and Delicious Journal. Maria has a lot of great information on eating healthy so I tried one of her recipes last night.
 
I made these Chocolate Flax seed Muffins. They were delicious. You can see my 5 year old daughter, Samantha, enjoying her muffin.

 
 
And here you see my little chunk monkey Stefanie at almost 11 months old. She is so beautiful and I love her giggles and big smiles. Her little cheeks are like meatballs and I just want to eat them. LOL! But I won't.

June Challenge Week 2



It's really difficult to stay focused on healthy eating on the weekend, especially when traveling with the family. But this past weekend I succeeded and I stayed focused. My family and I visited The Los Angeles Zoo. The weather was nice and we had a lot of fun. At lunch time I had a Chicken Cesar Salad and a Diet Pepsi. My family on the other hand had Churros, Ice Cream, and Popcorn. Yeah, not healthy.

When we were in Los Angeles after visiting the Zoo my husband was craving a burrito from King Taco. This is a Mexican restaurant in Los Angeles that is very popular for their tacos, burritos, and Sopes. There wasn't really anything I can order there to stay on low carb, so I had to get creative and I figured the Sopes would be my best choice. They come with the tortilla shell, beans, meat, cotija cheese, shredded cabbage. I asked my husband to order 3 without the beans. Then I scraped the goodies from the shell and I was left with only the meat, cotija cheese, and shredded cabbage. So I created a Sope salad.

This is how my breakfast looks every morning. I make scrambled eggs seasoned with garlic salt. Then I add some mozzarella cheese and fold it like a taco. 5 pieces of bacon. Finally a coffee with 2 splendas and half and half creamer.

On Sunday lunch and dinner, we had Grilled Cajun Chicken legs (my husband did them in the grill instead of the oven.), steamed broccoli, sliced avocado, and salad with ranch dressing.

I decided to try out the Jillian Michael's 7 day detox tea. I started this on Sunday afternoon and everything went well. Monday morning I started with a headache, then nausea, then stomach ache. I was miserable for half of the day at work. Then I felt like vomiting and I did. After that, I felt so much better and I threw away the tea. It's my fault, I made the tea too strong. The recipe calls for 1 tea bag and to submerge in the water for 45 minutes. What I did was boil the water, submerge 2 tea bags in a glass with hot water, then I added to the gallon with the cranberry juice and lemon juice. I think that was my mistake. I will resume the tea on Thursday and I will update you on my status.

On Monday night I was way too lazy to cook. I was still recovering from the tea. But I did manage to cut up some Zucchinis and season them with garlic salt and then I made an egg salad which consist of 3 eggs, 3 slices of cooked ham, mayo, salt and pepper.

Ok, on Tuesday I had grilled chicken seasoned with mesquite seasoning and steamed green beans. Here's the picture of my food.

Update on detox tea. So, I did the tea again on Thursday and no side effects. Today I woke up with a lot of energy and I felt lighter and I also feel like I'm loosing inches. That's a good sign. I know it has to do with my eating habits, exercise routine, and now I've incorporated the detox tea.
Last week my weight was at 173.5 and today I'm at 172. Oh yeah, the scale is moving in my favor again.



This was my week 2 challenge for June. It looks like I'm making some progress now after being stalled for 2 months on my weight loss. I am so happy and we'll see what week 3 brings into my life.

June Challenge Week 1

Today is weigh in day. I've been weighing 173-175 for the past 2 months and I've been stuck at this weight. This is my weight for today 173.5. Not bad and I'm actually relieved the scale didn't go over the 175 or else I would be crying.


So a little recap of my eating habits during the week. I'm not the writing down every single little thing I eat type of person but this sounds fairly right. See below and click on the links for recipes.

Breakfast
2 eggs
4 pieces of bacon
16 oz instant coffee with 2 splendas and half and half creamer
this adds up to approx 6 carbs

Snack
Atkins Bar or Shake

Lunch
Diet soda (I know i need to cut out the soda. Maybe next week)
Salad which contains lettuce, chicken, ranch dressing
or
Stuffed bell peppers
or
Protein Style In-N-Out Double Double

Snack
Hard boiled egg or Atkins Bar or Shake or Lemon Mug Cake, see picture below.


Dinner
Salad which contains lettuce, chicken, ranch dressing or
Meatballs, see picture below.



My favorite exercise is walking. I walk almost every Saturday and Sunday in the morning and do 4 to 5 miles and during the week I try my best to exercise in late in the afternoon and I do about 2-3 miles. Shorter route since it gets darker soon, but at least I try. Here's a snapshot of proof. I walked 2.39 miles and burned 269 calories. I wish the app would count the carbs I burned, but it doesn't. I have the free app for MapMyWalk so the information it provides is limited. As you can see at the bottom of the shot Humpty Dumpty is providing encouragement.






Well, there you go. My first week on the low carb challenge was a success. Hopefully I can shed 5 pounds by the end of next week. It doesn't hurt to dream. LOL! Have a great weekend and thanks for reading my little blog.

June Challenge

I've been on a low carb way of eating since 2013 started. I lost 20 pounds in the process so far, but for the past 2 months my weight loss stall. I got to admit, I've started cheating on the weekends. I have an awesome coworker that is also on low carb and we try really hard to support each other. When one of us is getting sidetracked the other puts us back into place, but we haven't been doing that. Both have struggled with this plateau. We had a little pep talked and told each other we will not cheat during the whole month of June. That's how the June Challenge was started in our little group of 2 people. It's Alicia (my coworker) and I against the temptation of bad carbs (the whole world). 


I felt great yesterday, so I decided to write down what I ate and what exercise I did.

Breakfast
2 eggs scrambled
4 pieces of bacon
Instant coffee with half and half and 2 splendas

Lunch
Stuffed bell peppers (they were so good. Alicia brought me lunch yesterday. You can see her recipe here.)

Dinner
Left over rottiserie chicken (shredded)
Broccoli and cauliflower (microwave steamed)


I walked 3 miles


Declutter and Organize

I've been reading about minimalism and how it can help distress and live free. Actually live with more freedom. There are a lot of blogs about minimalism and living simple that I've read and now I want to put it to the test in my home. I'm starting off slow because my husband is not really on board with the idea. He likes to save everything. I've actually thrown away s few of his stuff without telling him because if it were up to him he won't get rid of anything. 

This is actually my second step. Last weekend I declutter my home office and I forgot to take before and after pictures. Now it has a little bit of clutter because my daughter just finishes school and there are a few projects she brought home that I would love to cherish.


Ok so my second step is the shoe department. Like I mentioned earlier my husband doesn't like to get rid of anything. He has shoes under the bed, in the closet, by the door, in the garage and outside. Seriously. He has shoes from before we got married. 13 years ago. 13 years. Yeah,  sounding a little annoyed. 


 
The bottom picture is the end result and I had 2 trash bags full of shoes that got donated to Good Will.

Low Carb Lasagna

Before converting to low carb eating I used to eat pasta, a lot of pasta. Lasagna was one of my favorite pasta dishes. I had to give up pasta in order to lose weight and feel better overall.
